Harry Potter Butterbeer Cookies - If you're planning a Harry Potter party, you've got to make these cookies!

Oh how I love me some Harry Potter! The books, the movies, the costumes…it’s all just so good. One of my all-time-favorite vacations is a trip to Universal Studios and the Wizarding World of Harry Potter. There’s nothing quite like walking into Hogsmeade and Diagon Alley for the first time! And because I love Harry Potter so much, I love making food that celebrates Harry and all his friends. Most recently I made Butterbeer Krispy Treats, and I’m continuing the butterbeer trend with these Butterbeer Cookies. They’re so perfectly chewy and so good! Lots of butterbeer flavors in these guys.

Butterbeer Cookies are the perfect dessert for a Harry Potter party!

What is Butterbeer?

Sometimes I forget that not everybody is obsessed with Harry Potter like I am. If you’re one of those people, allow me to explain what in the world I’m talking about when I refer to butterbeer! Butterbeer is a non-alcoholic beverage the students enjoy when they visit places like the Three Broomsticks pub in Hogsmeade (You can read all about Harry’s first experience in Hogsmeade in Harry Potter and the Prisoner of Azkaban!).

Butterbeer is a carbonated, butterscotch-like beverage combined with a butterscotch whipping cream. You can make versions of the popular drink found online (I have a recipe for a frozen version that I LOVE!), and you can get what is quite possibly the best recipe of all at Universal Studios in Hollywood and Orlando.

Harry Potter Makes Me Happy

My set of Harry Potter books are sitting on my son’s bookshelf. Sometimes I find myself staring at all of them lined up so nicely and I want nothing more than to read the series over and over again. I know I’m not alone when I say that Harry Potter gets me so excited whenever I think about planning a party, making a recipe, or watching a movie. It’s one of those series that makes you feel so good and you fall in love with the story and the characters. Have you seen the illustrated editions of the Harry Potter books? They’re nothing short of stunning.

Harry Potter fans love a good butterbeer dessert! These Butterbeer Cookies are so flavorful and fun.

What I Love About Harry Potter

I love talking about Harry Potter and that people think go me when they see Harry Potter things online. There are so many things I love about this book series!

  1. The close relationship between Harry, Ron, and Hermione
  2. Halloween and Christmas both remind me of Harry Potter, which adds even more magic to those wonderful holidays.
  3. You can get away with having a Harry Potter party any time of the year.
  4. The books and movies are family-friendly so everyone can enjoy them.
  5. The storyline is so well thought out. From beginning to end, the story comes together without any plot holes.
  6. In the end, happiness means having people around you who love you.

I haven’t made nearly enough Harry Potter recipes and I’m kind of embarrassed about it. It’s time to turn that around! About eight years ago my twin sister threw a Harry Potter party and we put together some really fun food ideas. Butterbeer Freeze and Butterbeer Krispy Treats are two butterbeer favorites that we make over and over, whether it’s Harry’s birthday or just a Friday night. I made a yummy Gryffindor Popcorn with all the colors of Gryffindor house.

Butterbeer Cookies

Butterbeer is a must for any Harry Potter event, and Butterbeer Cookies are the perfect dessert! These cookies have big butterbeer flavor in every bite.

Ingredients

  • 1 c butter or margarine, softened
  • 1 c sugar
  • 1 c brown sugar
  • 2 large eggs
  • 1 tsp. vanilla
  • 1 tsp. salt
  • 1 tsp. baking soda
  • 1 (5.1 0z) box butterscotch instant pudding, or around this size
  • 2 3/4 c flour
  • 1 c butterscotch chips
  • 1 c white chocolate chips

Instructions

  • Preheat the oven to 375° F. In your stand mixer fixed with the paddle attachment, combine butter or margarine and both sugars; add eggs and vanilla.
  • Whisk salt, baking soda, and pudding powder together in a separate bowl. Add to the wet mixture then slowly add flour. 
  • With a wooden spoon, add chocolate chips and mix in well. Cover and place in the fridge for 15-20 minutes to chill. 
  • Bake on a greased baking sheet 7-9 minutes, or until light golden brown on top. Move to a cooling rack to cool. 

Notes

I prefer to bake cookies on a baking sheet with a silicone mat. These mats allow for a much more even bake and you don't have to grease them.

    I don’t have a stand mixer with a paddle, so how do I make these cookies?

      Hi Jo! You can also use a hand mixer or mix by hand with a wooden spoon.

    What cookie scoop size do you use? Mine seem huge and have to cook longer than 7-9min.

      I believe my scoop is the 1.25 ounce size, or the medium scoop. I have a small one and a larger one that you probably used, which would also be awesome for these cookies!

    Does this use 5.1oz of instant butterscotch pudding? I can only find 1oz boxes.

      Yes! Around 5.1 oz. You can get five of those 1 oz boxes and you’ll be good.

    What does 1 box (5.1) of butterscotch pudding mean? Is that the jell-o brand that is 3.4oz or in general 5.1 oz?

      I used a jell-o brand 5.1 oz box. I would say any size around that is great. Great question! Thank you for asking. I need to add the oz at the end of that number!

    I’m not a baker so this may be a dumb question…
    When referring to 1 box of pudding – are we adding just the dry mix or do we need to make the pudding with milk following the box directions and then add that to the other ingredients?

      No need to apologize because the instructions in this recipe are clear as mud. haha You’ll just put the pudding powder in and that’s it. No milk! Thanks so much for asking, I’m adjusting the instructions asap!

    I’ve read the recipe and the comments and am still confused! For the butterscotch pudding- we are mixing in the powder? Or we are making the pudding and mixing in the pudding?

    Made these for a Harry Potter D&D night and my friends went wild for them! I mean they ate half the batch and then begged me to bring them again the next game! These cookies are SUPER sweet so if you’re not a huge fan of really sweet desserts maybe leave out the white chocolate chips but over all a stellar recipe!

    Most excellent! For those wondering, yes this is meant to be a drier batter (I second guessed and added extra butter in my first batch, resulting in a slightly thinner cookie). Any kind of Butterscotch jello will work. The store didn’t have the regular when I was getting ready for batch 1 but they did have cook&serve. There wasn’t much difference between that batch and the next(where I was able to snatch up some regular mix to use, and made correctly). Lastly, I was unable to find the 5.1 oz boxes at any of the stores in my area so I used 1.5 boxes of the 3.4oz. Batch 2 looked exactly like the picture!
    As another commenter said, it is pretty sweet (but so is butterbeer, so it is to be expected) but very delish. It was definitely more popular with the younger crowd. XD

    The recipe didn’t say instant or cook and serve. And all I could find ( 4 different stores) was the cook and serve😢
    I’m going to try and order some instant and use the cook and serve for something else
    My sister has made these are they are so delicious!

    The cookies were good but they all spread out onto the baking sheet. Followed the recipe exactly so don’t know what went wrong.

      Hi Ariana! I’m sorry that the cookies didn’t work out for you. There are a few things that could have happened. Butter tends to be the culprit when cookies go flat, so it is possible that either the dough wasn’t chilled before baking or maybe the butter was too soft when the dough was made. Another factor could be that there wasn’t enough flour. It seems like there are often adjustments needed for the flour when the elevation is different. And a warm cookie sheet can also make the cookies start spreading too soon. Sorry again that they didn’t work out!
