My kids are all kid when it comes to their love for peanut butter. They could have a peanut butter sandwich every day, and some weeks they do! And I can be seen walking around the house with a spoonful of peanut butter on occasion. So good! National Peanut Board (NPB) is a commodity board representing America’s peanut farmers. And I’m excited to be partnering with them to celebrate September being Better Breakfast Month! Our family is celebrating with some delicious, homemade Peanut Butter Waffles. We love using Peanut Butter for Breakfast. Especially when we’re trying to fly out the door! My oldest loves his toast with peanut butter. We also love putting peanut butter in our smoothies. But it was “pretty cool” to my kids when we put peanut butter in the waffles!

We love incorporating peanut butter into our breakfast. I love that it is so high in fiber, protein, and good fats – three things we need to maintain a balanced diet and nutritious lifestyle. These waffles are a great way to feed the family a hearty breakfast and give them all those good nutrients. And if mornings just aren’t on your side like they aren’t for us sometimes, you can make this batter the night before and keep it in the fridge. Just pull it out in the morning and throw a scoop in the waffle iron for a quick and nutritious breakfast! We like our Peanut Butter Waffles with a few bananas on the top.

Peanut Butter Waffles

Ingredients

  • 2 c. flour
  • 1/2 c. sugar
  • 2 1/4 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1 tsp. cinnamon
  • 2 eggs
  • 2 c. milk
  • 1 c. creamy peanut butter
  • 3 Tbsp canola oil

Instructions

  • Whisk together flour, sugar, baking powder, baking soda, and cinnamon. In a separate bowl, combine eggs, milk, peanut butter, and canola oil.
  • Combine wet ingredients with dry ingredients until just combined. Don’t over mix. Place in a waffle iron for some fabulous peanut butter waffles!
