Gingerbread Cookies


I am participating in the funnest recipe swap. This is the third annual Christmas cookie recipe swap where multiple bloggers swap Christmas cookie recipes to share on their blogs. This is my first year participating and I’m so excited to participate in the years to come. rachel This year I was paired up with Rachel from R and R Workshop. I’ve known Rachel from other blogger collaborations and hops and I just love the girl. She sent me this recipe for Gingerbread Cookies. Not only did she give me a fabulous new Christmas cookie recipe, she also gave me my first-ever experience making gingerbread cookies. I know, right?! Where in the world have I been. My family and I loved putting these cookies together. From mixing the dough to decorating the cookies, my boys were all kinds of involved. It was such a fun family activity for us! Gingerbread Cookies We made gingerbread men, stars, and trees. We had so much fun decorating them! I would say that we plated them up and gave them to the neighbors, but they didn’t make it that far. haha Santa would love it if we made these for him on Christmas Eve! Gingerbread Cookies I’m so excited to start making these gingerbread cookies with my family during the holidays! And big thanks to Rachel for this yummy recipe. Gingerbread Cookies

Ingredients

  • 1/2 c. shortening
  • 1/2 c. sugar
  • 1 tsp. baking powder
  • 1 tsp. ground ginger
  • 1/2 tsp. baking soda
  • 1/2 tsp. cinnamon
  • 1/2 tsp. cloves
  • 1/2 c. molasses
  • 1 egg
  • 1 Tbsp vinegar
  • 2 1/2 c. flour

Instructions

  • Beat shortening with an electric mixer for 3O seconds. Add baking powder, sugar, ginger, cinnamon, baking soda, and cloves; beat until combined well.
  • Add molasses, vinegar, and egg; beat until well combined. Beat in half the flour then stir the rest in with a wooden spoon. Cover and chill for at least 2 hours or until dough is no longer sticky.
  • Roll the dough onto lightly floured surface until 1/4" thick. Use cookie cutters to make shapes and place on greased cookies sheets.
  • Bake 6-7 minutes at 375°. (I turned it down to 350° because my oven gets a little hotter than most.) Allow to cool before frosting and decorating.

    Oooh these look so good! We use an old family recipe for gingerbread houses but these look much more tasty for cookies
