So perfect for a #BigHero6MovieNight. @Target #adI think the release of “Big Hero 6” on Blu-ray and DVD was one of the biggest days of my boys’ lives. I think the only mistake I made was telling them way too early that the movie was coming out. Every day up until February 24th they asked when we were going to guy buy it.

And apparently we weren’t the only ones anxiously awaiting this movie release! We were there at 10am and already there were that many copies gone.

So perfect for a #BigHero6MovieNight. @Target #adOne of our favorite parts of movie night is making a treat that goes with the movie we’re watching. We got started on ours as soon as we got home. Although it took a minute to get my helpers to come into the kitchen. They both had their hands on the movie and sat on the couch talking about it.

These red velvet Baymax cookies turned out so yummy and cute. And to add to all the goodness…they’re easy! All you need is a red velvet cake mix and a couple more ingredients and the dough is done. So great.

Red Velvet Baymax Cookies - Chewy red velvet cookies with the lovable face of Baymax! So perfect for a #BigHero6MovieNight. @Target #adThe frosting for these cookies is SO good! I loved it when Hero said Baymax looked like marshmallows. So I decided to make my favorite marshmallow buttercream frosting for these cookies. It is amazing with the red velvet.

After frosting each cookie, it’s time to draw Baymax’s cute little face. You can get a tube of frosting gel in the baking aisle at your grocery store and it works great. I kept getting the line too thick so I drew mine halfway then used a toothpick to thin it out and make it longer. Add the dots at each end for the eyes and you’re done! So cute.

Red Velvet Baymax Cookies

Cook Time: 10 minutes

Yield: 32 cookies

Ingredients

  • 1 red velvet cake mix
  • 2 eggs
  • 1/2 c. butter, melted
  • Marshmallow Buttercream Frosting:
  • 1 c. butter, softened but not to room temperature
  • 1 1/2 c. powdered sugar
  • 1/4-1/2 tsp. almond extract
  • 1 (7oz) jar marshmallow fluff
  • black frosting gel tube

Instructions

  1. Combine cake mix, eggs, and melted butter in a mixing bowl with a wooden spoon. Drop by the spoonful (or using a cookie scoop) onto a greased cookie sheet.
  2. Bake 8-10 minutes at 350°. Allow to cool completely before frosting.
  3. Place softened butter for frosting in a mixing bowl. Beat with an electric hand mixer till creamy.
  4. Add powdered sugar 1/2 c. at a time to avoid a mess; add almond extract.
  5. Add marshmallow fluff and mix well.
  6. Frost cookies and carefully draw Baymax faces on each one with the frosting gel. Enjoy!

These cookies were perfect for our movie night! We laughed and laughed and had a blast. I got so loud laughing my kids had to tell me to be quiet a few times. So fun!

    Since we’ve been hit by snowstorm after snowstorm here in the northeast, our movie nights lately have consisted with a fire in the fireplace and lots of warm blankets. We haven’t seen Big Hero 6 yet, so I think this weekend sounds like the perfect time for that! #client
