Smooth and creamy vanilla ice cream is coated in cinnamon cereal and fried to perfection. This dessert has a ton of flavor with only a few ingredients! 

Fried Ice Cream

My kids love cereal. They eat it all day long for breakfast, snacks, and sometimes dinner. Their favorite cereal is Post Cinnamon Toasters so I jumped at the chance to create a recipe using it! Post cereals are a value buy during all the back-to-school shopping. They’re great for a meal or snack and in this case, dessert! Fried Ice Cream was the perfect recipe for Post Cinnamon Toasters. It made for one really easy coating and I didn’t have to add anything to it for the flavor.

Walmart has a great variety of Post cereals. We’re regular buyers of the Cinnamon Toasters so it was a no brainer to use that one for this recipe! Post Consumer Brands has something for the whole family. They have a wide variety of difference cereals that will satisfy everyone. You should see the variety we have in our pantry!

Other family Post cereal favorites are Berry Colossal Crunch and Honey Bunches of Oats. My husband starts his day with Honey Bunches of Oats almost every morning. And Berry Colossal Crunch is one of my go-to snacks for my two year old. He loves the flavors and different colors in the cereal.

Post Cinnamon Toasters

Just look at all the cinnamon and sugar goodness. Just what I needed for the coating on my Fried Ice Cream. All you have to do is finely crush it up and you’re set!

Fried Ice Cream

After freezing six ice cream balls well in the freezer, roll them into the cereal to coat. Place them back in the freezer for at least an hour, or until you’re ready to fry them. After a short 15-20 seconds in the hot oil, remove them and serve immediately. I loved mine with fresh raspberries and a little bit of whipped cream. Yummy!

Fried Ice Cream

Servings: 6 servings

Ingredients

  • 1.5 quarts vanilla ice cream
  • 6 c. Post Cinnamon Toasters cereal crushed into crumbs
  • 4 egg whites
  • 2 qt. oil
  • additional ice cream toppings for serving

Instructions

  • Place a sheet of wax paper on a cookie sheet; set aside. Scoop out six large scoops of vanilla ice cream and place on wax paper. You can form them more into a ball or leave them as is because the coating will cover them up anyway. Cover with more wax paper and freeze 3-4 hours until frozen solid.
  • Place cereal crumbs in a bowl and add egg whites. Stir together to combine. Roll each ice cream ball into the cereal crumbs and place back onthe cookie sheet. Cover and freeze again for at least an hour, or until ready to fry and serve.
  • Pour oil into a large pot and heat to about 375°. Use a slotted fry spoon to place one ice cream ball at a time into the oil. Heat until coating is a nice golden brown, about 20 seconds. Remove and place on a cooling rack with paper towels or a cookie sheet underneath for excess oil to drip.
  • Serve immediately with favorite ice cream toppings. Enjoy!
