In my book, easier is WAY better. In this case, a cheesecake that doesn’t need to go in the oven is pretty great! I do love a good and baked cheesecake, but it sure is nice making one that takes less than 5 minutes to put together!
This cheesecake is so easy and so deliciously creamy. I love the fresh, light, lemony taste. Make this a berry lemon cheesecake by adding canned pie filling to the top. Blueberry is my favorite with the lemon!
