This week is Food Allergy Awareness Week and I’m so happy to finally have a treat on my website that can be consumed by kiddos and adults with food allergies. Megan from Allergy Awesomeness contacted me about helping promote FAAW and I couldn’t say no to this opportunity! I’ve been wanting to create a gluten-free recipe for a while and this seemed like the perfect time to do it. There are so many families who have to live with food allergies and I can only imagine how difficult it can be sometimes. By sharing this recipe today, I’m hoping to make someone’s life a little bit easier so they can have delicious chip chocolate cookies in their home without having to worry about what’s in them.

Gluten-Free and Eggless Chocolate Chip Cookies

These cookies are great for kids who are gluten intolerant and/or can’t eat eggs. When you try them, you’ll have no idea they’re missing gluten and eggs! It’s a goody.

Gluten-Free and Eggless Chocolate Chip Cookies

Ingredients

  • 1 c. butter, at room temperature
  • 1 c. sugar
  • 1 c. brown sugar
  • 2 Tbsp cornstarch + 4 Tbsp water
  • 1 tsp. gluten-free vanilla
  • 1 tsp. salt
  • 1 tsp. baking soda
  • 1 (3.4 oz) box vanilla instant pudding
  • 2 c. gluten-free all-purpose flour
  • 1 c. Nestle chocolate chips (or other gluten-free chocolate chips)

Instructions

  1. Cream together butter and both sugars; add cornstarch mixture and vanilla.
  2. In a small bowl, whisk together salt, baking soda, and pudding. Add the dry mixture to the butter mixture, then slowly add flour.
  3. Add chocolate chips to the dough with a wooden spoon. Cover and place in the refrigerator then preheat the oven to 375°.
  4. Drop dough by the spoonful or with a cookie scoop onto a greased cookie sheet or onto a cookie sheet covered by a silicone baking mat. Bake 7-8 minutes, or until lightly golden on top. Allow to cool on the pan for two minutes then remove with a cookie spatula and place on a cooking rack to cool.
