The college basketball tournament is upon us! How is your bracket looking these days? A couple of games kind of turned my bracket upside down. But my team is still in it so I’m hopeful! We let our kids make their own brackets and while they have no clue who they’re picking and why, they love participating and watching the games. Over the weekend we made a snack for the The Big Tournament and my family LOVED them. I told them they had to wait for me to take pictures of these RITZ Tostadas before they could eat any and I thought the kids were going to cry. By the time they finally got their hands on these snacks, they were so happy and excited to get camped in front of the TV for the big game.

I went to Albertsons and picked up Mondelez and Coca-Cola/Coke Zero to make the ultimate snack for the tournament. My husband loves the glass Coca-Cola™ bottles and my kids love the mini Coca-Cola Zero™ cans. I love both!

RITZ Tostadas are so easy and perfect for game day. It’s all about piling each ingredient on top of RITZ crackers. They’re really quick to put together. If you need a snack that comes together in just a few minutes, you should make these!

Yield: 8 RITZ Tostadas

Ingredients

  • 8 RITZ Crackers
  • 3 Tbsp refried beans, warmed
  • 3 Tbsp shredded lettuce
  • 2 tsp. cheese dip, warmed
  • 24 pieces diced tomato
  • 8 slices jalapeno peppers

Instructions

  1. Top a RITZ cracker with refried beans, lettuce, cheese dip, three diced tomato pieces, and a jalapeno pepper slice; repeat with remaining ingredients.

    If I started eating these I would not stop! I think I would use pickled jalapenos just because they are not so hot to me. But with way this is a great snack.
