I love everything about Dr. Seuss! And I look forward to March 2nd every year so I can help celebrate Dr. Seuss’ birthday and Read Across America Day.

Whoever came up with the idea to have Read Across America Day is a genius. It’s a nationwide reading celebration that takes place annually on March 2—Dr. Seuss’s birthday. It’s the coolest thing! Across the country, thousands of schools, libraries, and community centers participate by bringing together kids, teens, and books.

This year Read Across America Day will be celebrated this Monday, March 3rd. And I have the perfect treat for you to help celebrate! These Cat in the Hat Cookies are easy to make and you can make a whole bunch at a time. They’re perfect for a school class!

These cookies were inspired by the darling cupcake toppers made by So Domesticated. Three ingredients is all it takes to make these super cute cookies: Oreo cookies, red Life Saver Gummies candy, and Betty Crocker decorating icing. Simply twist open the Oreo cookies and use the side that gets all the cream. Layer three pieces of candy with icing in between each to keep them stuck together and give the white and red stripe look of the Cat in the Hat’s hat. And that’s it!

Cat in the Hat Cookies

  • Oreo cookies
  • red Life Saver Gummies candy
  • white Betty Crocker decorating icing

Carefully separate the Oreos so all the cream is on one side. Add icing around the outer edge of the bottom of one of the candies and place it frosting side down on the center of the cookie cream.  Continue with two more candies. Enjoy!

    Did you purchase lifesaver gummies and just picked out the red ones or did you buy something different?
