Carrot Cake Cookies
Carrot Cake Cookies, the dessert staple at the iconic Writer's Stop in Disney's Hollywood Studios, is a decadent treat and incredibly easy to make at home. And you only need five ingredients!
Servings 12 cookie sandwiches
- 1 carrot cake mix
- 6 Tbsp butter melted and cooled to room temperature
- 2 eggs beaten
- 1 tsp. vanilla
- 1 can cream cheese frosting
Preheat the oven to 375° F.
Pour cake mix into a large mixing bowl; add butter, eggs, and vanilla. Use a wooden spoon or your hands to combine well.
Use a 1-inch cookie scoop to scoop out individual cookie dough balls. Place on a greased cookie sheet, or a cookie sheet with a silicone mat on top (don't grease), and bake for 9-11 minutes. Remove from cookie sheet and place on a wire cooling rack to cool.
Place cream cheese frosting in a gallon size ziploc bag. Cut off one corner to make a hole about 1/2-3/4 inches wide and pipe frosting onto the outer edge of the bottoms of 12 cookies. Top with remaining 12 cookies to make sandwiches. Serve and enjoy!
