Gluten-Free and Eggless Chocolate Chip Cookies


  • 1 c. butter at room temperature
  • 1 c. sugar
  • 1 c. brown sugar
  • 2 Tbsp cornstarch + 4 Tbsp water
  • 1 tsp. gluten-free vanilla
  • 1 tsp. salt
  • 1 tsp. baking soda
  • 1 3.4 oz box vanilla instant pudding
  • 2 c. gluten-free all-purpose flour
  • 1 c. Nestle chocolate chips or other gluten-free chocolate chips


  • Cream together butter and both sugars; add cornstarch mixture and vanilla.
  • In a small bowl, whisk together salt, baking soda, and pudding. Add the dry mixture to the butter mixture, then slowly add flour.
  • Add chocolate chips to the dough with a wooden spoon. Cover and place in the refrigerator then preheat the oven to 375°.
  • Drop dough by the spoonful or with a cookie scoop onto a greased cookie sheet or onto a cookie sheet covered by a silicone baking mat. Bake 7-8 minutes, or until lightly golden on top. Allow to cool on the pan for two minutes then remove with a cookie spatula and place on a cooking rack to cool.
