Red Velvet Baymax Cookies

Ingredients

  • 1 red velvet cake mix
  • 2 eggs
  • 1/2 c. butter melted

Marshmallow Buttercream Frosting:

  • 1 c. butter softened but not to room temperature
  • 1 1/2 c. powdered sugar
  • 1/4-1/2 tsp. almond extract
  • 1 7oz jar marshmallow fluff
  • black frosting gel tube

Instructions

  • Combine cake mix, eggs, and melted butter in a mixing bowl with a wooden spoon. Drop by the spoonful (or using a cookie scoop) onto a greased cookie sheet.
  • Bake 8-10 minutes at 350°. Allow to cool completely before frosting.
  • Place softened butter for frosting in a mixing bowl. Beat with an electric hand mixer till creamy.
  • Add powdered sugar 1/2 c. at a time to avoid a mess; add almond extract.
  • Add marshmallow fluff and mix well.
  • Frost cookies and carefully draw Baymax faces on each one with the frosting gel. Enjoy!
