A classic appetizer turned wonderfully sweet! Fruit Bruschetta is the perfect healthy snack for an afternoon at home.
Servings 16 slices
- 1 loaf french bread cut into 16 slices
- 1 lb strawberries
- 6 oz blueberries
- 4 kiwis
- 3 peaches
- 1 8 oz package light cream cheese, softened
- 1 c. strawberries
- 3 Tbsp sugar
Place strawberries in a chopper or food processor and blend till diced into tiny pieces. Combine with cream cheese and sugar; cover and place in the fridge at least one hour before spreading on bread slices.
Preheat the oven to 350°. Place bread slices on a baking sheet and bake 10 minutes, or until golden brown and crispy. Allow to cool completely.
Spread prepared strawberry schmear over each slice of bread. Top evenly with each fruit and serve immediately.
