Three Bean Salad

Three Bean Salad combines three beans, a light dressing, and some herbs to make the perfect side dish for a summer get together or Thanksgiving dinner!

Ingredients

  • 1 can green beans 15.5 oz
  • 1 can dark red kidney beans 15.5 oz
  • 1 can garbanzo beans 15.5 oz
  • 1 large shallot minced
  • 1/3 c. apple cider vinegar
  • 1/2 c. sugar
  • 2 Tbsp vegetable oil
  • 1 tsp. salt
  • 1/4 tsp. black pepper

Instructions

  1. Combine beans in a large bowl. Whisk vinegar, sugar, oil, salt, pepper, garlic, and shallots and pour over the beans; fold to coat.

  2. Cover with plastic wrap and place in the fridge to chill and allow flavors to meld. Serve cold.
