Impossibly Easy Breakfast Bake

It's great to be back after an awesome weekend with family! I hope you all enjoyed your Memorial Day weekend as much as we did. We spent the weekend in Idaho with both of our families and loved every minute of it. The only exception being when I completely overate on Saturday and could hardly move by Saturday night. I realized the hard way that I can't be almost 8 months pregnant and expect my stomach to just magically expand underneath all that baby when I want to eat two huge burgers and tons of sides in a day! I just love bbq food so much, I couldn't help myself!!

This weekend marked our last trip up to Idaho until after the baby comes. And nothing makes me sadder right now! Our first little guy was born 5 weeks early, so I've been told by my doctor that I'm not allowed out of the state Utah until after the baby is born just in case we have a repeat. That means no more bbq's, no family reunions, no Fourth of July on the falls, no parties...it makes me so sad! But I'm willing to make the sacrifice for Baby Boy.

I immediately thought of my mom's family reunion when I saw this Impossibly Easy Breakfast Bake over at Betty Crocker. One of the mornings of the reunion includes some form of breakfast casserole. It helps if this casserole is easy to prepare and will feed a large group of people. And that is why I thought of this Impossibly Easy Breakfast Bake! It accomplishes all of the above and then some. And it helps that it's good! This could be something new to present at the reunion this year that I'm sure everyone would love.


Impossibly Easy Breakfast Bake
Betty Crocker
makes 12 servings
  • 2 - 12 oz packages bulk pork sausage
  • 1 medium bell pepper, chopped (about 1 cup)
  • 1 medium onion, chopped (about 1/2 cup)
  • 3 c. frozen hash brown potatoes
  • 2 c. shredded Cheddar cheese
  • 1 c. Original Bisquick mix
  • 2 c. milk
  • 1/4 tsp. pepper
  • 4 eggs
Preheat the oven to 400 degrees and grease a 9x13 baking dish. Cook the sausage, bell pepper, and onion in a saute pan over medium heat until sausage is no longer pink; then drain. Stir together the sausage mixture, potatoes, and 1 1/2 cups of the cheese in a bowl and pour it into the baking dish.

In the same bowl you just used (to avoid dirtying a bazillion bowls), stir together the Bisquick mix, milk, pepper, and eggs until well blended. Pour into the baking dish over everything else.

Bake uncovered 40 to 45 minutes or until a knife inserted into the center comes out clean. Sprinkle with the remaining cheese and bake 1 to 2 minutes longer until it melts. Enjoy!

{Copycat} Wingers Sticky Fingers

The Sticky Fingers at Wingers are by far my favorite thing on the menu. I always order the Sticky Fingers Wrap. That would be my number one Wingers favorite! That sauce on the chicken is so yummy. Combine that chicken with a little bit of ranch dressing and I'm in heaven! Yum.

I was so excited when I found that I could make Sticky Fingers at home! I've seen all kinds of recipes for these Sticky Fingers on Pinterest. And not a single one of them were the same. But everyone swears their recipe is the tastiest and the closest to the real thing! So I decided to do my own thing as well, based on what others did. I'll show you what I mean:



{Copycat} Wingers Sticky Fingers
sauce makes enough for 4 to 6 chicken strips
  • Tyson brand frozen breaded chicken strips (Our Walmart was out of Tyson breaded chicken so I went with Pilgrim's chicken breast strips. They were a little bigger than a standard Sticky Finger, but they worked just great.)
  • 6 Tbsp. Frank's Original Hot Sauce (It has to be Frank's to get the right flavor! You can find this at any grocery store.)
  • 1 c. plus one spoonful brown sugar (Here is where I made the biggest change. Online I saw measurements from a 1/2 c. to 1 1/2 c. of brown sugar for the sauce. I tried it at first with 1/2 c. but the sauce was still hotter than the real thing. It also made my husband cough like crazy from the kick. I added one more half cup, plus a spoonful of brown sugar and it was perfect to me. It tasted what I think the real sauce would taste like. That comes to 1 cup plus a spoonful of brown sugar.)
  • ranch dressing (I prepared a packet of dry ranch dressing mix and used a cup of buttermilk instead of regular milk. It worked really well!)
(Add a little of the sauce to some ranch dressing and you've got yourself a mock of the Creamy Amazing Sauce!)

Get started by getting your chicken in the oven to bake. Or you can fry it, depending on your preference. It was really easy to just pop it in the oven and bake it! Then put the hot sauce in a sauce pan, along with the brown sugar. Heat on medium and allow the sugar to dissolve.


 When the chicken is done, place it in a bowl and pour the sauce over it. Stir the sauce around so all of the chicken pieces are evenly coated. Serve with ranch dressing and enjoy!

Baked Sweet and Sour Chicken

We are big fans of Chinese food at our house! There's a small Chinese restaurant in our hometown called Canton and we used to loved getting takeout from there. There was a period of time during this pregnancy where Chinese food was not on my list of favorites. I couldn't even stomach being around it! There was even a night where we were in Idaho with family and my husband's family had Chinese food for dinner during a party. The kids all got kids meals from Burger King. As much as I love Burger King, I would have much rather eaten Chinese that night!

Thank goodness I'm back to loving Chinese! And I was thrilled when I found this recipe for Baked Sweet and Sour Chicken. We made this for dinner last week and it tastes like we ordered it from a restaurant. It wasn't hard to make and the chicken ended up being super tender. That was a good night!


Baked Sweet and Sour Chicken

Six Sisters' Stuff

Chicken:
  • 3-4 boneless chicken breasts
  • salt and pepper, to taste
  • 1 c. cornstarch
  • 2 eggs, beaten
  • 1/4 c. canola oil
Sweet and Sour Sauce:
  •  3/4 c. sugar
  • 4 Tbsp ketchup
  • 1/2 c. vinegar
  • 1 Tbsp soy sauce
  • 1 tsp. garlic salt
Rinse the chicken breasts in water and pat dry. Then cut them into bite-sized pieces-the size you would get when you order them at a restaurant. Season with salt and pepper.

Dip the chicken pieces into the cornstarch to coat then dip them in the egg. Heat the 1/4 c. of oil in a large skillet and brown the chicken on both sides-just enough to brown but not cook them all the way through.

Place the chicken in a greased 9x13 baking dish. Mix all of the sweet and sour sauce ingredients together in a bowl with a whisk then pour evenly over the chicken. Bake for one hour at 325 degrees, turning the chicken every 15 minutes.* Serve over rice or with another Asian-inspired side. Yum!

*I baked the chicken for 45 minutes at 350 degrees and turned it once-halfway through the baking process. The chicken came out super moist and delicious!

Hawaiian Haystacks

I'm a little embarrassed to admit that Monday night was the first time I'd ever eaten Hawaiian Haystacks. My husband was shocked when I told him. It seems like everyone has eaten these before except for me! And probably my siblings. We never had them growing up so it's not something I've ever made for myself. I was on Pinterest the other day when I came by this recipe and thought I'd give it a try for dinner Monday night. My husband and son both loved it. My little guy can be a little picky so I was especially excited when he couldn't get enough of this. And my husband said that he liked the sauce on these better than what he had growing up. Yay! Another winning recipe discovered. I love that I can make a different Hawaiian Haystack every time with all of the different toppings options out there. This would make a great dish to feed a crowd.

I forgot to take pictures of the process when we made these. I guess I was too excited to try them and got sidetracked! I appreciate the use of the picture from Picky Palate!


Hawaiian Haystacks

makes 4 servings
  • 1 stick butter (I used half a stick to cut the fat and it worked great.)
  • 1/2 c. flour (I used 1/3 c. just to cut that down too. It also worked great.)
  • 1 tsp. salt
  • 1/2 c. sour cream
  • 1/4 tsp. fresh ground pepper
  • 32 oz. reduced sodium chicken broth
  • 2 tsp. dry Ranch Dressing seasoning packet
  • 1/4 tsp. garlic salt
  • 2 c. cooked shredded chicken breast
  • steamed rice, enough for your family
Topping Options (Don't feel limited to just these. The possibilities are endless! Choose what you like and run with it. The ones in bold are the ones we used.)
  • Chow Mein crispy noodles
  • diced green onions
  • black olives
  • pineapple
  • cranberries
  • almonds
  • tomatoes
  • shredded cheese
Directions

Jenny over at Picky Palate didn't mention how she cooked the chicken. But this is what I did: I placed two large, frozen chicken breasts in my crock pot and poured the chicken broth right over it. I set it on low and let it cook for 6 hours. When it was finished I took the chicken out and placed it in a bowl to shred. I poured the broth through a strainer and set it aside to use for later in the process. This gave the chicken a good flavor. As Anne Burrell always says, your chicken is always going to taste like what you cook it in!

Let's make Hawaiian Haystacks, shall we? Begin by placing the butter in a large saucepan over medium heat, stirring to melt. Slowly whisk in the flour, salt, and pepper and stir till smooth and thick (about 1-2 minutes).

Slowly whisk in the chicken broth until smooth. Increase the heat to high, whisking until thick (about 2 minutes). Add the sour cream, Ranch seasoning, garlic salt, and cooked chicken. Stir together well.

It's time to serve! Place a nice pile of rice in the middle of your plate and pour some of the gravy over the rice. Top with all kinds of delicious toppings and enjoy!

Cookies and Cream Cake

On Saturday night we celebrated Mother's Day as well as our brother-in-law's birthday with my husband's family. We had a fun bbq with grilled burgers and hotdogs, and loads of yummy salads. I was in charge of making the dessert. I wanted to make a cake because there was a birthday, but I also wanted to do something different that no one had ever eaten. Enter this cake! It is so easy to make and everyone LOVED it, including all of the little kids. And who wouldn't? The cake combined with the pudding turns into a smooth and creamy bite of heaven. And the crushed up Oreos on the top add a little bit of extra crunch and texture. Everyone kept saying over and over how much they loved this cake. Even our little four-year-old niece inhaled it and she's hard to please! This is a crowd pleaser for sure.


Cookies and Cream Cake
  • 1 chocolate cake mix (Including eggs, oil, and water needed to bake it)
  • 2 (4 oz) pkg Instant Oreo Cookies 'n Cream pudding
  • 4 c. milk (It's best if you use 2% or higher. But that's up to you!)
  • crushed up Oreo cookies (For the top - Less than a row will give you plenty! I think I used 8 Oreos.)
Directions

Begin by baking your cake. Bake it according to the directions on the box in a greased 9x13 pan. Take it out of the oven when it is finished and start making the pudding. Put both boxes in a bowl and add the milk. Whisk together just until the lumps are removed. Be careful not to mix it for the full time the box says and just mix it enough for everything to be mixed together. Then let it sit for about 2 minutes. You want it to start thickening but still be runny at the same time.


While the pudding is setting up for that 2 minutes, poke holes in the cake with the end of a wooden or plastic spoon. Put the holes all over the cake about an inch apart. I ended up going back through and adding more in between the rows since I spaced the holes a little too far apart. You can really do however many you want, but the more holes the better for this cake!


Once that pudding is ready, spread it directly over the cake. Gently press it over the holes to help it get down inside of the cake. (This is what makes it super yummy when you serve it!) Spread it evenly over the cake and let it sit out on the counter, uncovered, to cool down. Cover it up and chill it in the fridge till you need it. I made this a little over 24 hours in advance and it stayed really well. Sprinkle the crushed up Oreo pieces over the entire cake just before serving. Serve chilled.

Quick Summer Fruit Salad

I hope you all had a wonderful Mother's Day weekend! We had such a blast with both of our families and it was nonstop. One of these days we'll get to see some friends while we're in town. It was yet another busy weekend! We spent yesterday with my family. We had a nice Mother's Day lunch and then we got to talk to my little brother via Skype, who is serving a full time mission in Australia for our church. We got to talk to him for an hour and a half! It was so fun! He's been out for two months now.

We spent all day Saturday with my husband's family-lots of fun in the sun and a trip to the zoo. Saturday night marked our first bbq of the season. I love barbecuing! It is my favorite thing to do in the summer. We had grilled burgers and hot dogs and all kinds of yummy salads, including a fruit salad. I think a good fruit salad is one of my favorite things about summer in general. But sometimes they can take a lot of time to put together, cutting up fruit after fruit after fruit. They're so worth it, but it helps to have another set of hands or two to get it done faster! The recipe for this fruit salad is especially easy and quick. There is very little cutting required and can be put together in no time.


Quick Summer Fruit Salad

  • 1 (5.1 oz) package vanilla instant pudding
  • 1 (20 oz) can pineapple tidbits with juice
  • 1 lb. fresh strawberries, quartered
  • 3 bananas, sliced
  • 1 c. blueberries (optional)
  • 1 c. marshmallows (optional)
Combine the pudding and canned pineapple in a bowl (preferably not the bowl you'll be serving the salad in) and mix the pudding in with the juice. Stir until well blended and all of the pudding powder is dissolved. Fold in the strawberries and blueberries then refrigerate for at least an hour. Fold in the sliced bananas just before serving.

Can you believe Mother's Day is already in two days? I'm happy to say that we are ready to go with gifts and cards and it feels so good! We are fortunate to get to celebrate Mother's Day with both of our moms this year. We'll have a party on Saturday with my husband's family, then one on Sunday with my family. {Copycat} Taco Bell Crunchwrap Supremes



When I go to Taco Bell I always get a Crunchwrap Supreme. They're my favorite thing on the menu and a rare treat. We don't go to Taco Bell very often at all, but when I do I always get one of these babies with the biggest diet pepsi they have. On Pinterest a few months ago I came across this recipe for homemade Crunchwrap Supremes and about flipped my lid. I was so excited to try these! Then my pregnant brain forgot and we just barely got to them last night. And we were very pleased with the results! They were really good and super easy to make. I had fun putting them together for dinner. We bought most of the ingredients on Monday when we went to the grocery store as a family. (Brycen decided to throw the biggest tantrum of his life right there in the entrance of WinCo, which made for a very pleasant evening for anyone at the store.) We have enough ingredients leftover for a few more Crunchwrap Supremes this week and we're super happy about it. I already can't wait to eat these for dinner tomorrow night!

{Copycat} Taco Bell Crunchwrap Supremes
Culinary Couture
makes 6 crunchwraps
  • 6 burrito size flour tortillas
  • 6 tostadas (the flat, crunchy corn tortillas found in most grocery stores) or small corn tortillas
  • 1 lb. ground beef
  • 1 packet taco seasoning
  • sour cream
  • nacho cheese (I used Tostino's Smooth and Cheesy dip and it was lovely.)
  • shredded lettuce
  • diced tomatoes
Directions

Begin by browning the beef. Then add the taco seasoning according to the directions on the packet. If you're using small soft corn tortillas, place them on a cookie sheet in your oven for 2 minutes at 400 degrees. You want them to be golden and crunchy. If you use tostadas you won't have to do this part.


Place one of the flour tortillas in the microwave for 10 seconds so it is easier to fold. Place some of the seasoned beef directly in the center of the tortilla. I measured this by the size of the tostada and did a little less. (The tostada will be placed directly on top and you want it to be equal in size or have a little less beef.)


Top the beef with nacho cheese.


Then place one of the tostadas or corn tortillas directly on top of the beef and cheese. Spread a dollop of sour cream over it.


Then sprinkle tomatoes and lettuce over the tostada.


Starting with the bottom of the tortilla, fold the edges up to the center. The filling needs to be covered so if the edges are coming up short, tear off enough of another tortilla to cover the filling and place it in the center (as seen above). Then fold up all of the edges until all of the tortilla is folded over.


Place the crunchwrap seam-side down onto a greased saute pan. Heat for 3 minutes on medium-low so the bottom can get brown and crispy. 


Then flip it over and do the same thing to the other side. Now it's time to scarf it down!

Popcorn!

Last week I was asked what my ideal Mother's Day activity would be. My answer was a movie night with my husband and son. On Mother's Day I would love to just watch a movie in bed with my boys while enjoying popcorn and M&M's. And a diet pepsi in reasonable reach, of course. My answer became my inspiration for today's post and I'm really excited to share! I LOVE a yummy popcorn treat, especially while watching a movie. I've found a whole bunch of yummy sweet popcorn recipes that are sure to please. Any one of these would be perfect for a movie night with the boys. I can't wait to try more of these!

This is one of those popcorn treats that makes me want to shout for joy. Oreos, Red Hot candies, white and semi-sweet chocolate, and popcorn all thrown together into one bowl? Really? I know that dreams are a wish your heart makes, but according to Cinderella they only happen when you're asleep. Apparently this dream is coming true and I couldn't be happier! Count me in for a taste test!

{Copycat} Pizza Hut Deep Dish PIzza & Cheese Bread

We are HUGE fans of Pizza Hut pizza at our house! Growing up we all loved pizza night. My parents usually bought our pizza from a little hole-in-the-wall pizza joint called Choices. Idaho Falls residents, did you ever go to Choices? My family loved that place! But every now and then we received a rare treat of Pizza Hut pizza. If one of us had a Book It to turn in for pizza, my parents ended up getting pizza for the rest of the family as well. (Remember Book It? Wow, that was awesome.) We're all about Pizza Hut! And now Pizza Hut can be recreated at home! It's a big hit!

{Copycat} Pizza Hut Cheese Bread

serves 4-8
  • 1 1/2 c. warm water
  • 2 Tbsp sugar
  • 1/2 tsp. salt
  • 1/2 c. non-fat dry milk
  • 1 Tbsp yeast
  • 3 c. flour
  • 1/2 c. melted butter (Half of it will be used for the bottom of the pan and the other half for the top of the bread sticks.)
  • 8 oz. package mozzarella cheese
  • garlic powder, Parmesan cheese, salt and pepper to sprinkle on top (to taste)
Directions
  1. In your mixer bowl or a large bowl, dissolve the yeast in the warm water. Let it sit for 5 minutes.
  2. Add sugar, milk, and salt to the yeast. Then add enough flour to make a soupy texture. 
  3. Then add the rest of the flour to form a moderately stiff dough. Knead the dough until smooth. (I like to do this in my KitchenAid with the hook attachment.)
  4. Roll the dough into the size and shape of your 9x13 baking pan.
  5. Spread half of the butter onto the bottom of the pan then place the dough right over it. Cover it with a towel and let it rise for 15 minutes. Then spread the rest of the butter on top of the dough.
  6. Top the dough with the cheeses, garlic powder, salt, and pepper. If you're just making garlic bread sticks and not cheese sticks, use everything but the cheese. 
  7. Bake for 20-25 minutes at 350 degrees or until golden brown. Cut into bread sticks and serve with your favorite marinara sauce or the sauce recipe below.


{Copycat} Pizza Hut Deep Dish Pizza

makes three 9-inch pizzas

Pizza Dough
  • 1 1/3 c. warm water (around 105 degrees F)
  • 1/4 c. non-fat dry milk
  • 1/2 tsp. salt
  • 4 c. flour
  • 1 Tbsp sugar
  • 1 package dry yeast
  • 2 Tbsp vegetable oil
Sauce
  • 1 can (8 oz) tomato sauce
  • 1 tsp. dry oregano
  • 1/2 tsp. marjoram
  • 1/2 tsp. dry basil
  • 1/2 tsp. garlic salt
Other Ingredients
  • 2-3 c. mozzarella cheese, shredded 
  • desired toppings
  • 9 Tbsp vegetable oil (3 Tbsp per pan, or less if desired)
  • butter flavored cooking spray
Directions
  1. First, make the dough. Put yeast, sugar, salt, and dry milk in your mixer bowl or a large bowl. Add the water and stir to mix well. Allow to sit for two minutes. Add the oil and stir again. Add the flour a little at a time and stir until dough forms and the flour is absorbed.
  2. Turn the dough out onto a flat surface (with flour sprinkled over it) and knead for about 10 minutes. Divide the dough into three balls. Put 3 Tbsp of oil in three 9-inch cake pans, making sure it is spread out evenly. Use a rolling pin to roll each dough ball to about a 9-inch circle. Place in the cake pans.
  3. Spray the outer edge of the dough with cooking spray and cover with a plate. Place in a warm area and allow to rise for 1 to 1 1/2 hours. 
  4. Time to make the sauce! Combine the tomato sauce, oregano, marjoram, basil, and garlic salt. And there you have it! Sauce is done. 
  5. Now let's bake these pizzas. Preheat the oven to 475 degrees. Spoon 1/3 c. of sauce on the dough and spread to within 1 inch of the edge. Sprinkle 1/4 c. mozzarella cheese over the sauce. Place the toppings of your choice over the cheese in this order: pepperoni or ham, then vegetables or pineapple, then other meats (cooked ground beef or sausage). Top with 1/2 c. mozzarella cheese (or your desired amount). Bake until the cheese is bubbling and the outer crust is brown (about 10-15 minutes).
